Gabby wishes to someday expand into teaching fondant classes and hosting Fijis first ever cake show.

Pettinice helps me create the really fun cakes. I love working with it, and the colours are brilliant!

What is the very first cake you remember making?

The infamous Train cake that’s loaded with candy like chocolate, jelly beans etc.

A recipe sort out from the Women’s weekly magazine from the 90s. I had made the cake for a dear nephew in 2010.It was this cake that sparked the passion I now have.

Why/how did you become a cake decorator?

Growing up, I was always surrounded by food and cakes. My mother made cakes throughout our whole childhood and just seeing what she made inspired me to learn more. In fact seeing what other talented people made from cakes around the world  is what inspired me to love the art.

What has been the most challenging cake you have made to date?

The biggest wedding cake I had made a few years ago. It stood so tall that even the last two tiers had to be put on with the help of a ladder, and funny enough I’m 6ft tall.

What was the last cake that made you cry? (from joy even!)

Ahhh a beautiful hand painted 4 tier cake I made. Everything was perfect till one of the tiers cracked on one side. This was the result of traveling on a speed boat for 1 hour, all the bumps etc. contributed to the crack hence a last minute change in design.

Bride loved it but I on the other hand was devastated.

What cake do you wish someone would order?

I have always been a wedding person but I’d really wish someone would challenge me to something out of the ordinary. to create a cake for a big event.

What is your favourite part of the cake decorating process?

Definitely the finishing process. When the entire design comes together after being curated in your head for so long lol!

What do you listen to while you are decorating?

Lots of afro beats during intense moments while caking, but when I’m in the zone making delicate things it needs to be soft, so Celine Dion works like a charm ha-ha!

What is your favourite Pettinice colour?

Other than Black, Red Pettinice is my absolute favourited as well. The colour is super red and tastes great too.

Do you make your own birthday cake?

Only once for my 21st birthday and that was it. My family, however, gifts me a cake from our local homemakers.

What’s your favourite cake delivery story?

Having mixed up the dates for a wedding; instead of delivering the cake next week we had prepared everything a week earlier showing up to the venue which is about 1 hour 30 mins away with a 5 tier cake but no wedding. Had wee bit of a laugh after realizing it, but also gutted because we had to re do the whole thing again.

What’s something you wish people would know about your business?

That creating detailed pieces for a cake is not cheap. People assume making detailed custom cakes is cheap.

What’s next in your cake world?

Hosting our country’s first ever cake show. A big challenge to comprehend but we will get there.
